Creamy, protein-packed overnight oats with peanut butter and banana that come together in just five minutes. Perfect for busy mornings or last-minute brunch hosting.

Ingredients

  • 1 cup (90g) rolled oats (old-fashioned oats)
  • 1 cup (240ml) milk of choice (whole milk, oat milk, or almond milk)
  • Β½ cup (120g) plain Greek yogurt
  • 1 medium ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • For topping: extra sliced banana, drizzle of peanut butter, chopped peanuts or dark chocolate chips, cinnamon (optional)

Instructions

  1. In a medium mixing bowl, mash the ripe banana with a fork until mostly smooth.
  2. Add the milk, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract (if using). Whisk until smooth and fully combined.
  3. Stir in the rolled oats, chia seeds, protein powder, and a pinch of salt. Mix until no dry spots remain.
  4. Divide the mixture evenly into jars or airtight containers, leaving about half an inch of space at the top.
  5. Add toppings if desired: press banana slices into the top, drizzle extra peanut butter, and sprinkle with chopped peanuts or chocolate chips.
  6. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight.
  7. In the morning, stir the oats. If too thick, add a splash of milk. Add fresh toppings just before serving. Serve cold or at room temperature.

Notes

For best texture, use rolled oats (not instant or steel-cut). The banana should be very ripe with brown spots for natural sweetness. If using plant-based protein powder, whisk it into the wet ingredients first to avoid clumps. Oats keep in the fridge for up to 4 days. Do not freeze.
