This pumpkin spice cold brew concentrate is a crowd-pleasing, easy-to-make drink that combines bold coffee with warm spices and pumpkin puree. Perfect for hosting, it requires just 5 minutes of active prep and steeps overnight for a silky, flavorful concentrate that guests will love.

  • 1 ½ cups (180g) coarse ground coffee (medium or dark roast)
  • 4 cups (960ml) filtered water
  • ¼ cup (60g) pumpkin puree (100% pure, not pumpkin pie filling)
  • 2 teaspoons pumpkin pie spice (or homemade blend: 1 tsp cinnamon, ½ tsp nutmeg, ¼ tsp ginger, ¼ tsp allspice, pinch cloves)
  • 2 cinnamon sticks
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (optional)
  • Pinch of sea salt

Instructions

  1. In a large jar or pitcher (at least 64 oz/2 liters), combine the coarse ground coffee, pumpkin pie spice, cinnamon sticks, and salt. Stir to distribute the spices.
  2. Pour the filtered water over the coffee-spice mixture and stir gently until all grounds are saturated (like wet sand).
  3. In a small bowl, whisk the pumpkin puree with about ½ cup of the coffee-spice water until smooth. Pour back into the main jar and stir again.
  4. Cover the jar and let it steep at room temperature for 12 to 24 hours (18 hours is ideal).
  5. Place a fine-mesh strainer lined with cheesecloth over a large bowl or pitcher. Slowly pour the steeped mixture through the strainer. Do not press on the grounds.
  6. Stir in the vanilla extract and maple syrup (if using). Taste and adjust spices if desired.
  7. Pour the finished concentrate into an airtight storage bottle. Refrigerate for up to 2 weeks. To serve, fill a glass with ice, add ⅓ cup concentrate, and top with ⅔ cup milk of choice. Garnish with a cinnamon stick or nutmeg.

Notes

For best results, use coarse ground coffee to avoid a bitter, cloudy concentrate. The pinch of salt is essential to balance flavors. Steep for 18 hours for optimal spice and coffee balance. The concentrate can be served hot by mixing with hot water or milk. Freeze in ice cube trays for instant iced coffee that doesn’t water down.
