  • 1 can (4 oz) sliced black olives
  • Red food coloring (gel preferred)

Instructions

  1. Hard-boil the eggs: Place 12 large eggs in a single layer in a large saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat (8-10 minutes). Cover, turn off heat, and let sit for exactly 12 minutes. Transfer to an ice bath for at least 5 minutes.
  2. Peel the eggs: Gently crack each egg on the counter, roll between palms, and peel starting from the wider end. Rinse under cold water to remove shell fragments.
  3. Slice and scoop: Cut each egg in half lengthwise. Pop out yolks into a medium bowl. Arrange egg white halves on a serving platter, cut-side up.
  4. Mash the yolks: While still slightly warm, mash yolks with a fork until completely smooth.
  5. Make the filling: Add mayonnaise, mustard, vinegar, salt, pepper, and smoked paprika to the mashed yolks. Stir until creamy and well combined. Taste and adjust seasoning.
  6. Optional: Color the filling: Add 2-3 drops of green or purple food coloring and stir until evenly colored (for kids’ parties).
  7. Fill the egg whites: Transfer filling to a piping bag or zip-top bag with a small corner snipped off. Pipe filling into each egg white half, mounding slightly.
  8. Make spider decorations: Cut whole black olives in half lengthwise for bodies. Cut sliced black olives in half for legs. For each spider, use one olive half and eight leg pieces (four per side).
  9. Assemble spiders: Place one spider on each deviled egg, pressing legs gently into filling. Use a tiny dab of filling to glue the olive body in place.
  10. Add ‘blood’ effect: Dip a small pastry brush into red food coloring and lightly streak it across egg whites and filling for a spooky splatter effect.
  11. Dust with paprika: Sprinkle a light dusting of smoked paprika over the entire platter for a ‘dirty’ look.
