A creamy, fruity, and slightly nutty purple punch made with ube, coconut milk, and pineapple juice. This show-stopping Halloween drink is deceptively simple to make and perfect for a crowd.

  • 1–2 teaspoons ube extract (or 2–3 tablespoons ube powder)
  • 1 (13.5-ounce) can full-fat or light coconut milk
  • 2 cups unsweetened pineapple juice
  • 1 teaspoon vanilla extract
  • 7 ounces (half a can) sweetened condensed milk
  • 1 liter ginger ale or lemon-lime soda (optional, for fizz)
  • Ice ring or ice cubes (for serving)

Instructions

  1. Make the ice ring the night before: Fill a bundt pan or round cake pan halfway with water. Freeze for 2 hours, then arrange spooky garnishes (plastic spiders, star fruit slices, edible flowers) on the surface. Cover with more water and freeze solid, ideally overnight.
  2. In a large pitcher or mixing bowl, combine the coconut milk and pineapple juice. Whisk until smooth.
  3. Add the sweetened condensed milk, vanilla extract, and 1 teaspoon of ube extract. Whisk until combined. Taste and add more ube extract (up to 1 more teaspoon) for stronger flavor and deeper color. Add more condensed milk if desired.
  4. Cover and refrigerate the punch base for at least 2 hours, or up to 24 hours.
  5. Just before serving, remove the ice ring from the freezer. Run the bottom of the pan under warm water for 10 seconds to loosen. Place the ice ring in a large punch bowl or cauldron.
  6. Pour the chilled punch base over the ice ring. If using, add the ginger ale or lemon-lime soda and gently stir.
  7. Garnish with additional star fruit slices or rosemary sprigs. Serve with a ladle.

Notes

Don’t skip the ice ring—it keeps the punch cold without diluting it. Chill all ingredients beforehand for best results. For a boozy version, add 1-1.5 cups of coconut rum or vanilla vodka. Leftover punch base (without ice or soda) can be stored in the fridge for up to 3 days.
