These Sweet & Spicy Grilled Honey Sriracha Chicken Skewers are a happy accident turned into a most-requested summer dish. The perfect balance of sweet honey and bold Sriracha creates a sticky, caramelized glaze over juicy chicken, ready in about 30 minutes.

  • 1.5 lbs boneless skinless chicken thighs, cut into 1.5-inch cubes
  • 1/3 cup honey
  • 3 tablespoons Sriracha sauce
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • Juice of 1 lime
  • 1012 wooden skewers, soaked in water for 30 minutes
  • Optional garnish: sesame seeds, sliced green onions, fresh cilantro

Instructions

  1. Soak wooden skewers in water for 30 minutes before cooking.
  2. In a medium bowl, whisk together honey, Sriracha, soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil until smooth.
  3. Reserve about 1/4 cup of the marinade in a small bowl for basting.
  4. Pat chicken thighs dry and cut into 1.5-inch cubes.
  5. Place chicken cubes in a bowl or zip-top bag, pour the main marinade over, and toss to coat. Refrigerate for 15 minutes to 2 hours.
  6. Preheat grill to medium-high heat (400-450°F). Clean and lightly oil the grates.
  7. Thread 4-5 chicken cubes onto each skewer, leaving a small gap between pieces.
  8. Grill skewers for 4-5 minutes on the first side, then flip and brush the cooked side with reserved basting sauce. Cook another 4-5 minutes, then flip and brush the other side. Chicken should reach an internal temperature of 165°F.
  9. Transfer skewers to a platter, let rest 2-3 minutes, then squeeze fresh lime juice over and garnish with sesame seeds, green onions, and cilantro if desired.
  10. Serve immediately.

Notes

For best results, don’t overcrowd the skewers. Grill the first side without basting to prevent burning. Let chicken come to room temperature before grilling for even cooking. Double the reserved basting sauce if you prefer a thicker glaze.
