  • 68 medium fresh jalapeños (about 200g / 7 oz)
  • 1 cup white vinegar (240 ml)
  • 1 cup water (240 ml)
  • 1 tablespoon kosher salt (18g; reduce to 2 teaspoons if using table salt)
  • 1 tablespoon granulated sugar (12g)
  • 34 cloves garlic, smashed
  • 1 teaspoon black peppercorns (2g)
  • 1/2 teaspoon dried oregano (Mexican oregano preferred)
  • 1 bay leaf (optional)

Instructions

  1. Prepare the Jalapeños: Wash and dry the jalapeños. Slice off stems. For medium heat, slice into 1/8-inch (3mm) rounds. For milder pickles, remove seeds and white pith before slicing. For extra heat, leave seeds intact. Wear gloves if sensitive to capsaicin.
  2. Pack the Jar: Place smashed garlic cloves, black peppercorns, and dried oregano at the bottom of a clean 16-ounce (475 ml) mason jar. Pack sliced jalapeños tightly into the jar, leaving about 1/2 inch (1.5 cm) headspace. Tuck in bay leaf if using.
  3. Make the Brine: In a small saucepan, combine white vinegar, water, kosher salt, and granulated sugar. Bring to a rolling boil over medium-high heat, then reduce heat to low and simmer for 2 minutes, stirring occasionally, until salt and sugar are fully dissolved.
  4. Pour the Brine: Carefully pour the hot brine over the packed jalapeños using a funnel if available. Fill to the top, covering all peppers. Tap the jar gently on the counter to release air bubbles. Poke out any remaining bubbles with a chopstick or knife. Add more brine if needed.
  5. Cool and Seal: Place the lid on the jar and screw tightly. Let the jar cool to room temperature on the counter (about 30 minutes to 1 hour). Do not refrigerate while hot.
  6. Wait: Refrigerate the jar. Wait at least 24 hours before eating for best flavor. 48 hours is better, and 1 week is ideal for fully developed flavor.

Do not skip the sugar—it balances the vinegar’s sharpness. Slice evenly for consistent pickling. Do not over-boil the brine; simmer only 2 minutes. Use a non-reactive pot (stainless steel, enamel, or glass). Let the pickles rest at least 24 hours; flavor improves over time. Store in refrigerator for up to 3 months. Reuse leftover brine to pickle other vegetables or add to dressings.
