Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. Wash and trim the zucchini, then grate using the large holes of a box grater. Place shredded zucchini in a clean kitchen towel, gather edges, and squeeze firmly over the sink to remove as much liquid as possible. Set aside.
  3. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and cinnamon until well combined.
  4. In a medium bowl, whisk together eggs, oil, granulated sugar, brown sugar, and vanilla extract until smooth and glossy. Add Greek yogurt and whisk until fully incorporated.
  5. Pour wet ingredients into dry ingredients and fold with a rubber spatula until just combined (a few streaks of flour are okay). Do not overmix.
