Ingredients

Scale
  • 1 cup cold brew coffee (store-bought or homemade)
  • 1/2 cup milk of choice (whole milk or oat milk recommended)
  • 12 tablespoons maple syrup or simple syrup
  • Ice cubes (enough to fill glass)
  • 1/4 cup heavy cream (or full-fat coconut cream for dairy-free)
  • 2 tablespoons milk of choice (2% or whole milk)
  • 1 tablespoon pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 tablespoon maple syrup (or brown sugar syrup)
  • 1/2 teaspoon pumpkin pie spice (plus extra for garnish)
  • 1/4 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Make the cold brew base: If using store-bought cold brew, skip this step. For homemade, combine 1 cup coarsely ground coffee with 4 cups cold water in a mason jar. Stir gently, cover, and steep in the fridge for 12-24 hours. Strain through a fine-mesh sieve or cheesecloth.
  2. Prepare your glass: Fill a tall glass with ice cubes (large cubes preferred to slow melting).
  3. Mix the coffee base: In a small bowl or directly in the glass, combine 1 cup cold brew concentrate, 1/2 cup milk, and 1-2 tablespoons maple syrup. Stir until syrup is dissolved. Taste and adjust sweetness.
  4. Make the pumpkin cream cold foam: In a small bowl or jar, combine heavy cream, milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of sea salt. Stir gently to break up the pumpkin puree.
  5. Froth the cream: Using a handheld frother, froth the mixture for 30-45 seconds until thick and velvety, holding soft peaks. Do not over-froth.
  6. Layer the drink: Pour the cold brew mixture over the ice. Using a spoon, gently layer the pumpkin cream cold foam on top, starting around the edges and filling in the center.
  7. Garnish and serve: Sprinkle extra pumpkin pie spice on top. Serve immediately with a straw.

Notes

Use cold ingredients for best frothing. If cold foam is too runny, chill for 5 minutes before re-frothing. Don’t skip the pinch of salt—it balances sweetness and enhances pumpkin flavor. For dairy-free, use full-fat coconut cream and oat milk. For a hot version, use strong hot coffee and let foam sit at room temperature for 5 minutes before spooning on top.
