  • Filling: 8 oz (225g) cream cheese, softened
  • 1 cup (120g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30ml) heavy cream (optional)

Instructions

  1. Make the Brownie Batter: Preheat oven to 350°F (175°C). Melt 1/2 cup unsalted butter. In a bowl, whisk melted butter and 1 cup granulated sugar until smooth. Add 2 eggs and 1 teaspoon vanilla extract, mix well. Sift in 1/3 cup flour, 1/4 cup cocoa powder, and 1/4 teaspoon salt. Stir until combined, fold in 1/2 cup chocolate chips. Batter should be thick but spreadable.
  2. Prepare the Cookie Dough: In another bowl, cream 1/2 cup softened butter with 3/4 cup brown sugar and 1/4 cup granulated sugar until fluffy (~3 minutes). Beat in 1 egg and 1 teaspoon vanilla extract. In a separate bowl, whisk 1 1/4 cups flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Gradually add dry ingredients to wet, mix until just combined. Fold in 3/4 cup chocolate chunks.
  3. Bake the Cookie Layer: Line baking sheet with parchment. Drop cookie dough balls spaced 2 inches apart using a scoop or tablespoon. Flatten each ball to about 1/2 inch thick. Bake 10-12 minutes until edges are golden but centers soft. Cool on rack.
  4. Bake the Brownie Layer: Spread brownie batter in greased or parchment-lined 8×8 inch pan. Bake 18-20 minutes until toothpick comes out with moist crumbs. Cool completely, then cut into 1 1/2 inch squares.
  5. Assemble Sandwich Bites: Beat 8 oz softened cream cheese with 1 cup powdered sugar and 1 teaspoon vanilla until smooth. Add 2 tablespoons heavy cream if desired. Spread a teaspoon of filling on a cookie, top with a brownie square to form sandwich. Repeat with remaining pieces. Chill at least 30 minutes before serving.
