These savory pimiento cheese and crispy bacon sliders are an easy, crowd-pleasing Derby party snack featuring creamy, tangy cheese and smoky bacon on soft slider buns.

  • 12 soft, small slider buns (preferably King’s Hawaiian)
  • 1 ½ cups sharp cheddar pimiento cheese (homemade or store-bought)
  • 8 slices thick-cut bacon, cooked until crispy and drained
  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika (optional)
  • 2 tablespoons finely chopped green onions
  • Freshly ground black pepper, to taste
  • Optional: a few dashes of hot sauce

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy, about 8–10 minutes. Drain on paper towels.
  2. In a mixing bowl, combine pimiento cheese, green onions, garlic powder, smoked paprika (if using), black pepper, and hot sauce (if desired). Stir well.
  3. Slice each slider bun horizontally. Arrange bottom halves on a baking sheet and brush with melted butter.
  4. Toast buns under a broiler or in a 375°F oven for 3–5 minutes until golden and slightly crisp.
  5. Spread about 2 tablespoons of the pimiento cheese mixture on each toasted bun bottom. Top with one slice of crispy bacon.
  6. Place the top bun halves over the bacon, brush with remaining melted butter, and warm in the oven for 2–3 minutes.
  7. Serve immediately while warm and melty.

Use thick-cut bacon for best texture and flavor. Toast buns with melted butter to prevent sogginess. Watch buns carefully while toasting to avoid burning.
