A quick and easy birthday cake recipe that transforms a boxed mix into a moist, buttery, bakery-quality cake with simple pantry ingredients.

Ingredients

Scale
  • 1 box yellow cake mix (Betty Crocker recommended)
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • Optional: 1/2 cup sour cream

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease your baking pan(s) and lightly dust with flour or line with parchment paper.
  2. In a medium bowl, combine the cake mix, milk, melted butter, eggs, and vanilla extract. Use an electric mixer on medium speed or whisk vigorously until just smooth.
  3. If using, fold in sour cream gently with a spatula to keep the batter airy.
  4. Pour the batter evenly into your prepared pan(s). Smooth the top with a spatula.
  5. Bake for 30-35 minutes (for 9×13-inch pan) or 25-30 minutes (for two 8-inch rounds). Check doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer to a cooling rack to cool completely before frosting or serving.

Notes

Use whole milk instead of water for richer flavor. Melted butter replaces oil for a tender crumb. Do not over-mix the batter to avoid toughness. Room temperature eggs help the batter rise evenly. Properly grease and flour pans or line with parchment paper for easy cake release. Optional sour cream adds extra moisture and tang. Variations include using chocolate cake mix, gluten-free mix, or dairy-free milk and butter substitutes.
