  • 6 cups fresh watermelon, cubed (seedless or personal-sized melon recommended)
  • 1 tablespoon fresh lime juice
  • 1012 fresh mint leaves, roughly chopped or torn
  • 1/4 teaspoon sea salt
  • 1 teaspoon honey or agave syrup (optional)
  • 1 cup crushed ice (optional)

Instructions

  1. Chill your watermelon in the fridge for at least an hour before starting.
  2. Cut the watermelon in half, then into quarters. Remove the rind and cut the flesh into roughly 1-inch cubes to yield about 6 cups.
  3. Rinse and pat dry the mint leaves, then tear or roughly chop 10-12 leaves.
  4. In a large mixing bowl, combine the watermelon cubes with lime juice, sea salt, and honey or agave syrup if using. Toss gently to coat evenly.
  5. Sprinkle the chopped mint over the watermelon and toss lightly again.
  6. Serve chilled, optionally adding crushed ice to the bowl or serving watermelon over ice in individual bowls.
  7. Taste and adjust by adding more lime juice or salt if desired.

Notes

Chill watermelon before preparation for better texture. Add crushed ice just before serving to avoid watery fruit. Salt enhances sweetness and flavor. Mint should be added last for best aroma. Best eaten within a few hours to avoid watery texture. Variations include adding chili powder for spice, blueberries or cucumber for texture, or coconut cream for creaminess.
