A simple and forgiving slow cooker recipe using just three main ingredients to create tender, flavorful pulled pork perfect for sandwiches.

  • 34 pounds pork shoulder (pork butt), well-marbled
  • 1½ cups BBQ sauce (e.g., Sweet Baby Ray’s or homemade)
  • 1 large yellow onion, sliced
  • Optional: hamburger buns, coleslaw, or pickles for serving
  • Optional: apple cider vinegar or Worcestershire sauce (for variation)

Instructions

  1. Trim any large excess fat from the pork shoulder, leaving some fat for juiciness. Pat dry with paper towels. (5 minutes)
  2. Peel and slice the large yellow onion into thick slices. (3 minutes)
  3. Place the sliced onions in the bottom of the slow cooker. Set the pork shoulder on top. Pour 1 cup (240 ml) of BBQ sauce evenly over the pork. (5 minutes)
  4. Cover and cook on LOW for 6 to 8 hours, or until pork is fork-tender and shreds easily. (6-8 hours)
  5. Remove the pork from the slow cooker and shred it using two forks or meat claws. (10 minutes)
  6. Pour the remaining ½ cup (120 ml) BBQ sauce from the crockpot over the shredded pork and mix thoroughly. Add sauce gradually if preferred less saucy. (3 minutes)
  7. Assemble sandwiches by piling pulled pork onto hamburger buns. Add coleslaw or pickles if desired. (5 minutes)

Notes

If sauce is too thin after cooking, simmer it on the stove for 5-7 minutes to thicken before mixing with pork. Keep the slow cooker lid tight to retain moisture. For a spicy kick, add hot sauce or cayenne after shredding. Use gluten-free buns and check BBQ sauce labels for gluten-free adaptation.
