  • 1 cup blueberries (150g)
  • 1 cup kiwi, peeled and sliced (150g)
  • 1 cup mandarin orange segments, drained (150g)
  • Optional: fresh mint leaves for garnish

Instructions

  1. Prepare the crust: In a medium bowl, combine 1 Β½ cups graham cracker crumbs, β…“ cup melted unsalted butter, and 2 tablespoons granulated sugar. Mix until the crumbs look evenly moistened and clump together when pressed, about 3 minutes. If too dry, add a teaspoon more melted butter.
  2. Press the crust into the pan: Pour the crumb mixture into a 9×13 inch dish. Press firmly and evenly across the bottom to form a compact layer about ΒΌ inch thick. Refrigerate for 15 minutes to set.
  3. Make the cream cheese glaze: In a clean bowl, beat 8 oz softened cream cheese with Β½ cup powdered sugar until smooth and fluffy, about 2-3 minutes. Add 1 teaspoon vanilla extract and 2 tablespoons milk, mix until silky. Add more milk if needed to reach spreadable consistency.
  4. Spread the glaze over the crust: Remove crust from fridge and spread cream cheese glaze evenly on top. Return to fridge for 15 minutes to firm up.
  5. Prepare the fruit topping: Wash and slice strawberries, kiwi, mandarin segments, and blueberries. Pat dry to avoid extra moisture.
  6. Arrange the fruit: Once glaze is set, arrange fruit on top in desired pattern.
  7. Chill before serving: Refrigerate the finished fruit pizza slab for at least 30 minutes before slicing.
  8. Serve and enjoy: Slice into squares and serve chilled. Keep refrigerated if not eating immediately.
