Instructions

  1. Preheat your oven to 425Β°F (220Β°C) and allow it to heat for at least 10 minutes.
  2. Peel and chop 2 large sweet potatoes into roughly 1-inch cubes, keeping pieces uniform for even cooking.
  3. Place sweet potatoes in a large mixing bowl. Add 2 tablespoons olive oil, 1 teaspoon salt, Β½ teaspoon black pepper, 1 teaspoon smoked paprika, and Β½ teaspoon garlic powder. Add fresh herbs or cayenne pepper if using. Toss well to coat every piece.
  4. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread the sweet potatoes out in a single layer without overcrowding.
  5. Bake for 20 minutes, then use a spatula or tongs to flip the sweet potatoes for even browning.
  6. Continue baking for another 15–20 minutes until edges are golden and crisp and centers are tender when pierced with a fork.
