A creamy, custardy French toast bake layered with tangy cream cheese and juicy blueberries, perfect for an easy and comforting brunch.

Ingredients

Scale
  • 1 loaf sturdy bread like brioche or challah, cut into 1-inch cubes (day-old works best)
  • 1 ½ cups frozen blueberries (fresh can be used with longer soak time)
  • 8 oz (225 g) cream cheese, softened and cut into small cubes
  • 6 large eggs, room temperature
  • 2 ½ cups (600 ml) whole milk or half-and-half (can substitute almond milk for dairy-free)
  • 2 tsp pure vanilla extract
  • ¼ cup (60 ml) maple syrup, plus extra for serving
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 2 tbsp melted butter (for greasing the baking dish and flavor)
  • Optional toppings: powdered sugar for dusting, extra fresh blueberries or sliced almonds for garnish

Instructions

  1. Cut the loaf of bread into 1-inch cubes and set aside. Cut the softened cream cheese into small ½-inch cubes.
  2. In a large bowl, whisk together eggs, milk or half-and-half, vanilla extract, maple syrup, cinnamon, and salt until fully combined and smooth.
  3. Grease a 9×13 inch baking dish with melted butter. Place bread cubes evenly in the dish.
  4. Scatter frozen blueberries evenly over the bread cubes.
  5. Distribute cream cheese cubes evenly on top, pressing slightly into the bread.
  6. Pour the custard mixture slowly over the bread, blueberries, and cream cheese, ensuring all pieces are coated. Gently press the bread down to soak up the custard.
  7. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate for at least 8 hours or overnight.
  8. Preheat oven to 350°F (175°C). Remove the dish from the fridge and bake uncovered for 45-55 minutes, until the top is golden brown and custard is set (a knife inserted should come out clean). Tent with foil if top browns too fast.
  9. Let the bake rest for 5-10 minutes before serving. Dust with powdered sugar and garnish with fresh blueberries or sliced almonds if desired.
  10. Serve warm with extra maple syrup.

Notes

Use day-old or slightly stale bread for best custard absorption. Overnight soaking is key for texture and flavor. If using fresh blueberries, increase soak time. Butter the baking dish well for a crispy edge. Let the bake rest before serving to set custard. Can substitute dairy-free ingredients for a dairy-free version.
