  • 3 large egg whites (about 90ml), at room temperature
  • 3/4 cup granulated sugar (150g)
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 1824 dark chocolate mini eggs

Instructions

  1. Preheat your oven to 325Β°F (160Β°C) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat the 3 large egg whites with an electric mixer until soft peaks form (3-5 minutes).
  3. Gradually add the 3/4 cup granulated sugar while continuing to beat until stiff, glossy peaks form (2-3 minutes).
  4. Gently fold in 1 teaspoon vanilla extract and a pinch of salt using a spatula.
  5. Fold in the 3 cups shredded coconut gently but thoroughly until the mixture is sticky and holds together (2 minutes).
  6. Using a tablespoon or cookie scoop, place mounds of the mixture onto the prepared baking sheet. Create an indentation in the center of each mound to form a nest shape (10-15 minutes).
  7. Bake for 18-20 minutes or until edges are golden and tops feel firm to the touch. Start checking at 15 minutes to avoid over-browning.
  8. Remove from oven and let macaroons cool completely on the baking sheet (about 10 minutes).
  9. Gently place 3-4 dark chocolate mini eggs into the center of each nest while still warm (10 minutes).

Use clean, dry equipment to ensure egg whites whip properly. Do not overmix coconut to keep fluffiness. Watch oven closely after 15 minutes to prevent burning.
