  • 3 large eggs, room temperature
  • 1/2 cup vegetable oil or light olive oil
  • 1 cup finely shredded fresh carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract
  • For the Brown Butter Frosting:
  • 1/2 cup (1 stick) unsalted butter
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9×13 inch baking pan with butter or non-stick spray.
  2. In a large bowl, combine the carrot cake mix, eggs, and oil. Beat with an electric mixer on medium speed for 2 minutes until smooth but thick.
  3. Fold in shredded carrots, drained pineapple, and nuts (if using) gently with a rubber spatula to keep texture light.
  4. Pour batter into prepared pan and spread evenly. Tap pan gently on counter to release air bubbles.
  5. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Start checking at 30 minutes.
  6. While cake bakes, melt butter in a small saucepan over medium heat, swirling constantly until it browns and smells nutty (about 5-7 minutes). Remove from heat and let cool slightly.
  7. In a medium bowl, beat softened cream cheese until smooth. Gradually add powdered sugar on low speed to avoid sugar cloud.
  8. Add cooled browned butter, vanilla extract, and salt. Beat until creamy and fluffy, about 3 minutes. Chill frosting 10 minutes if too soft.
  9. Cool cake completely on a rack for 45 minutes to 1 hour before frosting.
  10. Spread brown butter frosting evenly over cooled cake. Optionally, sprinkle extra chopped nuts on top.

Use room temperature eggs for even mixing. Brown butter carefully to avoid burning. Chill frosting if too soft before spreading. Let cake cool completely before frosting to prevent melting. For gluten-free, use gluten-free box mix and adjust baking time. Vegan adaptations include flax eggs and dairy-free substitutes.
